At this time of year we want to prepare ourselves for a busy festive season and the last thing we want is to come down with some unwelcome lurgy.
Bone broth ,whether we have it on its own or use it for a base for soup, ticks a lot of immune boosting boxes. It is high in collagen,protein,zinc,glycine and is great for healing your gut plus joint and skin health.
Easy Bone Broth
1. Chicken carcass plus skin and meat.( preferably organic)
2. 1 onion, 1 carrot, clove of garlic,bayleaf plus any other veg you want to add.
3. One tablespoon apple cider vinegar to help take the goodness out of the bones.
4. Sea salt and pepper
Add filtered water to cover all the ingredients (tap will also do)
Bring everything to the boil and cook on the stove whilst topping up with water for a couple of hours. I have a slow cooker so use that and allow it to cook for 24 hours.
Sieve and enjoy the flavour of the rich liquid(add in some of meat too)
This can also make a very tasty base for soups which being a Scot I am addicted to soup making.
If you have friendly local butcher you may find they are happy for carcasses not to go to waste.
Also sometimes I use home made stock to add flavour to risotto dishes too.
